Chicken Potpie & My 1st Linky Party

Today is the first time I am being the host of a link party along with some of my other friends. so I have named my post Chicken Potpie and my 1st Linky Party. We have a small group and we call this Foodie Friends Friday.

My recipe for this special party today is Chicken Potpie. We all love having pie and we all love making them too. This is one recipe that can be tried and tasted in various variations. Since chicken is the most easily available ingredient. I have used it in making a very simple, light and delicious potpie.

We all are aware of the basic ingredients of the pie dough. For those who are not aware heres what you need:

For Dough:

3 scoops Freezed Shortening
10 scoops of Chilled Butter cubes
1 cup Flour
1 tsp salt
2tbsp cold water
1 pinch of baking powder

  • In a pot add all the ingredients except the water and mix. Knead it to a dough. Add the water only if it is needed, as the cold shortening and butter will reduce moisture.
  • Wrap the dough in a plastic ziplock bag without air. Freeze it for 4-5 hours at least.
Ingredients for Stuffing:
300 gm of shredded boneless chicken
Salt to taste
2 tbsp pepper powder
1tbsp Lemon juice
1 medium onion chopped
2 cloves garlic chopped
1 tsp cayenne pepper
1/2 bell pepper chopped
A stalk of celery chopped
2 tbsp Olive oil
2tbsp milk
2 tbsp hollandaise sauce
1 tsp sugar
  • In a pan mix all the ingredients together and let it rest for an hour.
  • Now in small oven proof pot pour in the stuffing as per the capacity of the pot.
  • Cover the top of the pot with the dough. Block the edges with the help of a fork.
  • Make tiny holes in few areas of the dough with a stick or knife.
  • Bake in the oven on 160 centigrade for 15-16 minutes. Serve it with any salald or sauce.
